You may also want to check for their appearance. The brownies should be pulled slightly away from the pan's sides when you check inside the oven. There should be a dry-looking sheen to the top of the brownie and should be set. They should be slightly puffed around the edges, but not jiggly in the center of the pan.
The batter for these brownies should be generally smooth and rather thick. However, it should be easy to mix or pour into your brownie pan.
Check the thickness of your brownie by scooping some batter using a spoon and to see how it falls back into the bowl. If it sticks to the spoon then it means that the batter is too thick and need to be slightly thinned.
