How fun was decorating cut-out cookies as kids? This better-for-you version will not disappoint! Cut them out into whatever shape you please and have fun making each one special with the frosting and sprinkles of your choice. Our grain-free, gluten-free recipe is great for parties, backyard BBQs, or to keep all to yourself.

    1. In a medium bowl, mix the butter on high speed with a hand mixer until fluffy and light, about one minute.
    2. Add sugar and mix until combined, scraping sides of the bowl as needed.
    3. Beat in eggs, vanilla, and baking powder until combined.
    4. Add cassava flour, one cup at a time, and mix until a sticky dough forms.
    5. Transfer dough onto a piece of plastic wrap, form into a ball, and refrigerate for about one hour.
    6. Once the dough is chilled, line a cookie sheet with parchment paper and preheat the oven to 325°F.
    7. Divide dough in half. Sprinkle about a teaspoon of cassava flour on a piece of parchment paper, then flatten the first ball of dough on parchment. Sprinkle additional cassava flour on top of the dough, then place another piece of parchment on top. Using a rolling pin, roll out dough to ¼-inch thickness.
    8. Use desired cookies cutters to cut out of the dough. Using a spatula, carefully transfer the cookies to the lined baking sheets. If the dough is sticky, dip the cutter into a little cassava flour before cutting the dough.
    9. Gather dough scraps into a ball and roll out once more, then repeat cutting shapes. Repeat with the second half of the dough.
    10. Bake for 15-18 minutes, until the edges are lightly golden brown.
    11. Remove from oven and allow to cool completely before transferring to a wire rack. Decorate with your favorite icing.

    How do you store cookies after baking?

    Make sure cookies are cooled completely before storing.  You can store them at room temperature in an airtight container. For decorated cookies, a layer of parchment in between each layer of cookies will help them not squish into each other.  If you made different flavors, store them separately.
