This recipe is so easy - using one of our grain-free brownie mixes - and it comes with a rich peanut butter filling with chocolate ganache on top. Try to resist eating it right away. Letting them cool completely makes it delectable, easy to slice, and enjoyable to eat.

Ingredients

  • 1 bag Otto’s Naturals Grain-Free Brownie Mix (Paleo or Classic)
  • ½ cup avocado oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Peanut Butter Filling:

  • ½ cup peanut butter
  • 1 cup powdered sugar
  • 4 Tablespoons butter, softened
  • 2-3 Tablespoons milk
  • Pinch of salt

Chocolate Topping:

  • 1 ½ cups chocolate chips
  • 4 Tablespoons butter

Instructions

  1. Line an 8x8-inch baking pan with parchment paper. Preheat the oven to 350°F.
  2. Prepare the brownie mix as directed on the bag using ½ cup of oil, 2 eggs, and vanilla extract. Add the chocolate chips. Stir until the batter is smooth.
  3. Spread the batter evenly into the prepared baking pan.
  4. Bake for 25-30 minutes. Let the brownies cool completely before frosting.
  5. Once the brownies are cool, combine the peanut butter filling ingredients in a mixing bowl. Beat until a smooth frosting forms. If the frosting seems too thick, add a little bit more milk until a creamy consistency is achieved.
  6. Spread the peanut butter mixture over the brownies.
  7. In a small saucepan, melt the chocolate topping ingredients together over low heat. Stir frequently to keep the chocolate chips from burning and to mix the melted butter in with the melting chocolate chips.
  8. Once the chocolate topping is smooth, spread it over the peanut butter layer.
  9. Let the chocolate harden before slicing and serving!
