Grain-Free Graham Crackers for S'mores

Summer is right around the corner, and we cant stop dreaming of sitting by a cozy campfire on a cool night. No backyard or camping adventure is complete without s'mores though, and we all know s'mores need a great graham cracker to hold it all together! That's where this recipe comes in: with the toasty flavors of molasses and cinnamon, this grain-free graham cracker is the perfect addition to your summer festivities. Or enjoy plain as a better-for-you afternoon snack!

Ingredients

  • 3 Tablespoons butter, melted 
  • 1 Tablespoon blackstrap molasses 
  • 1 egg 
  •  ½ cup organic coconut sugar
  • 1 cup Otto's Naturals - Cassava Flour
  • ¼ teaspoon baking soda 
  • ½ teaspoon salt 
  • 1 teaspoon ground cinnamon 
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper. 
  2. In a large bowl, combine the melted butter, molasses, egg, and coconut sugar. Stir until well combined. 
  3. Add the cassava flour, baking soda, salt, cinnamon, and vanilla. Stir until a smooth dough forms. You should be able to handle the dough without it sticking to your hands. 
  4. Lightly dust a sheet of parchment paper with cassava flour. Place the dough on the parchment paper and flatten it slightly into a rectangle. Place another piece of parchment paper over the dough and use a rolling pin to flatten the dough to about ¼-⅛ inch thick. Thicker graham crackers will be soft and thinner graham crackers will get more crunchy. 
  5. Remove the top layer of parchment paper and use a pizza cutter to slice the dough into graham crackers. We cut ours into about 2x3-inch rectangles. 
  6. Use a spatula to carefully transfer each graham cracker onto the cookie sheet. Use a sharp knife to make a score line across the middle of each cracker. Use a fork to poke two sets of holes above and below the score mark to make classic graham cracker markings. 
  7. Bake for 12-15 minutes. Cool for 5 minutes on the cookie sheets before transferring the graham crackers to a cooling rack to cool completely before enjoying!

Okay, not everyone has access to a campfire, so we don't blame you if you need to make your s'mores over the stovetop, in the oven, or even in the microwave! Any way to get marshmallow-y, chocolatey grain-free goodness in your mouth is a good way!

What makes a graham cracker?

Graham crackers are actually named for a coarse type of whole wheat flour, and it was originally a bland and flavorless cracker. Now it's often flavored with honey or cinnamon. Our grain-free recipe may not feature whole wheat, but we still give it delicious toasty flavors thanks to a touch of molasses and a hefty bit of ground cinnamon!
