Buckle up, cookie lovers! This recipe is a sensory explosion disguised as a humble cookie bar. Imagine soft, chewy cookie bars bursting with your favorite treats: classic chocolate chips, chopped bars bars, salty pretzels and gooey caramels. The best part - with our snack recommendations, they're still completely grain-free!

    1. Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
    2. Prepare the grain-free cookie mix as directed on the bag using the ½ cup of butter, 1 egg (or flax egg), and vanilla extract. Stir until the cookie dough is smooth.
    3. Open 1 bag of caramels and cut the caramels into 4-5 pieces each. Fold in the toffee chocolate, pretzel pieces, caramel pieces, and chocolate chunks or chips.
    4. Spread the batter evenly into the baking pan.
    5. Bake the bars for 25-30 minutes, the edges should be lightly browned and the center should be mostly set. While the bars are baking, unwrap the other bag of Smart Sweet caramels and cut each caramel into 3-4 pieces. As soon as the bars come out of the oven, press the caramel pieces randomly into the bars.
    6. Let the bars come to room temperature before cutting. Let cool completely before storing in an airtight container.
