Our peanut butter cookie bars start with our Grain-Free Ultimate Cookie Mix, and it only gets better from there! The soft texture of this cookie bar meets the decadent bite of chocolate chips, making it the perfect combination to enjoy during snack time or to serve as dessert. Feel free to top it off with more crushed peanuts to add a more nutty taste and bit of crunch.

  1. Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, combine the cookie mixes, eggs, softened butter, vanilla extract, and creamy peanut butter. Stir until a smooth batter forms.
  3. Add the chocolate chips and stir until everything is combined.
  4. Spread the batter evenly into the baking pan.
  5. Bake for 30-40 minutes. The edges of the cookie bars should be lightly browned and the center should not be jiggly.
  6. Let the cookie bars cool completely before frosting.
  7. To make the frosting, scoop the frosting into a microwave safe bowl. Microwave for 20-30 seconds or until the frosting can easily be hand-whipped into a smooth, spreadable frosting.
  8. Stir in the peanut butter. Spread the peanut butter frosting over the cooled cookie bars. Top with crushed peanuts if desired. Slice and serve!
  9. Store leftovers in an airtight container. These bars freeze and unthaw well.
