Buttery tender shortbread acts as a crust to a chewy layer of chocolatey brownie on top.   • 1 bag Otto's Naturals Grain-Free Brownie Mix (Paleo or Classic)
  • ½ cup avocado oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 325°F. Line an 8x8-inch glass baking dish with parchment paper.
  2. Make the shortbread: In a large mixing bowl, beat together the butter and sugar. Add the vanilla, cassava flour, and sea salt. Stir until well combined. Pat the mixture into the glass baking dish 
  3. Bake for 20 minutes. The edges of the shortbread should be just starting to brown. If the edges rise up, use a spoon to press them down the sides as soon as the shortbread comes out of the oven to create a flat shortbread layer. 
  4. Increase the oven temperature to 350°F. 
  5. Make the brownies: In the same mixing bowl, combine all of the brownie ingredients. Stir to combine. Spread the brownie mixture over the shortbread layer. 
  6. Bake the brownies for 20-30 minutes.
  7. Allow the brownies to cool completely before slicing and serving! 

What is "shortbread"?

Shortbread is named for it's "short" (crumbly) texture. Instead of being long and stretchy (like the chewiness of regular bread), traditional wheat shortbread has a "short" texture due to the high ratio of fat.

That makes this shortbread recipe even better and better-for-you because Cassava Flour has NO gluten in it, meaning these bars are the most tender, buttery delights!
