This simple baked oat cobbler is made with a sweet & juicy peach feelings. But if peaches aren't your thing (or if they're not in season), feel free to substitute it with your favorite stone fruits, berries, pome fruits, or even a mix! This customizable cobbler recipe means you can enjoy it any time of the year, and it will still feel new to you and your friends & family! We certainly love a one-stop-shop kind of recipe in our kitchen, and we're sure you will love this one too!

Ingredients

  • Ā¾ cup Ottoā€™s Naturals Cassava Flour
  • Ā½ cup gluten-free old fashioned rolled oats
  • Ā½Ā cup non-dairy/dairy milk
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • Ā¼ teaspoon ground ginger
  • Ā¼ teaspoon allspice
  • 3 peaches
  • Ā½ Tablespoon non-dairy/dairy butter
  • 1 Tablespoon brown sugar
  • 2 scoops vanilla ice cream or yogurt of choice, for topping

Instructions

  1. Preheat the oven to 180Ā°C/350Ā°F.
  2. Slice the peaches and place them in a pan with the butter and brown sugar.Ā 
  3. Cook peaches on low heat for 5 minutes, or until it softens. Spread them out on the bottom of a 9x13-inch baking pan.
  4. Mix together the oats, cassava flour, eggs, cinnamon, ginger and allspice until smooth.Ā 
  5. Pour the batter on top of the peaches and bake for 15-20 minutes, or until lightly golden.
  6. Once baked, allow it to cool for at least 10 minutes before serving with vanilla ice cream or yogurt. Enjoy!
