We're turning breakfast into an absolute treat with these cookie muffins! Simply make your grain-free chocolate muffin batter, top it with cookie dough using our Grain-Free Ultimate Cookie Mix, and bake! You can easily make these vegan, so everyone at the table can enjoy! Whether you want to serve these as a special breakfast treat or a fun afternoon snack these are guaranteed to please tastebuds and tummies.

Ingredients
Muffins:- ½ cup neutral oil
- 2 eggs
- ½ cup Otto’s Naturals Cassava Flour
- ½ teaspoon Otto’s Naturals Grain-Free Baking Powder
- ½ cup sugar
- ¼ cup cocoa powder
- ½ bag Otto’s Naturals Grain-Free Ultimate Cookie Mix
- ¼ cup melted butter (or dairy-free alternative)
- ½ egg (or flax egg)
- 1 cup vegan (or non-vegan) chocolate chips
Instructions
- Preheat the oven to 180°/ 350°F. Line your muffin tin and set it aside.
- Whisk the sugar, oil and eggs together until smooth.
- Add the flour, cocoa powder and baking powder and whisk until incorporated.
- In a separate bowl, mix together the cookie mix, melted butter and egg until it comes together as a dough. Then fold in the chocolate chips.
- Divide the muffin batter into your muffin tin and top each with an equal amount of cookie dough. Bake them for 20-30 minutes and springy to the touch. A knife should come out clean with a few crumbs but not wet.
- Allow to cool then enjoy!
