We love banana bread, banana muffins, banana Bundt cakes. The works. We also love a super simple & quick snack cake that uses up those few bananas that have been sitting on the counter. Pair with a cream cheese frosting and some chopped nuts for a classy snack cake, or opt for dairy-free frosting and no nuts if you're going something a bit more laid back! Regardless of your cake customizations, your friends and family will be sure to go bananas over this delicious grain-free delight!

Ingredients

Cream Cheese Frosting (or your favorite frosting recipe!)

  • ½ cup butter, softened
  • 8 oz. cream cheese, room temperature
  • 1 ½ cups powdered sugar
  • 1 tsp. vanilla extract

Instructions

  1. Preheat the oven to 325°F. Line an 8x8-inch glass baking pan with parchment paper. 
  2. In a large bowl, combine the cassava flour, cane sugar, baking soda, baking powder, and salt. Stir until well combined. 
  3. Add the avocado oil, eggs, and mashed banana. Stir until a smooth batter forms. 
  4. Pour the batter into the baking pan. Spread the batter evenly into the pan. 
  5. Bake for 40-45 minutes. The banana cake should be golden brown and a toothpick inserted into the center should come out clean or with dry crumbs. 
  6. Let the cake cool completely before frosting and decorating!
  7. To make the frosting, beat the softened butter in a mixing bowl until it is light and creamy. Beat in the cream cheese and powdered sugar until a smooth, fluffy frosting is formed. Beat in the vanilla extract.
