  1. Preheat the oven to 350°F. Line a mini muffin tin with 24 mini muffin cups. 
  2. In a medium-sized bowl add in the cassava flour, sugar, baking powder, and salt and whisk together.
  3. Add in the egg, oil, and water and mix well to combine. 
  4. Fold in the chocolate chips. 
  5. Pour the batter into the mini muffin cups, filling each cup full. 
  6. Bake for about 15-20 minutes or golden. A toothpick inserted into the center of the muffins should come out clean. 
  7. Let the muffins cool in the pan for 2-3 minutes before enjoying! 
  8. Store leftover muffins in an airtight container.
