Grain-Free Spice Snack Cake

We personally love this autumnally-spiced dairy-free version made with our Grain-Free Cassava Flour and Grain-Free Baking Powder. It's super easy to bake up, and you can serve it with your favorite frosting! Whether you choose chai buttercream, cream cheese icing, or even store-bought dairy-free frosting, the result will be grain-free bliss.
Ingredients
- 1 ½ cups Otto’s Naturals Cassava Flour
- 1 cup organic coconut sugarÂ
- 1 teaspoon baking sodaÂ
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- ½ teaspoon saltÂ
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmegÂ
- ½ teaspoon ground gingerÂ
- â…› teaspoon ground clove
- ¾ cup avocado oilÂ
- 2 eggs
- ¾ cup dairy-free yogurt (SoDelicious plain coconut yogurt works the best)Â
- Your favorite vanilla, cream cheese, or autumn-spiced frosting!
Instructions
- Preheat the oven to 325°F. Line an 8x8-inch glass baking pan with parchment paper.Â
- In a large bowl, combine the cassava flour, coconut sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Stir until well combined.Â
- Add the avocado oil, eggs, and yogurt. Stir until a smooth batter forms.Â
- Pour the batter into the baking pan. Spread the batter evenly into the pan.Â
- Bake for 40-45 minutes. The spice cake should be golden brown and a toothpick inserted into the center should come out clean or with dry crumbs.Â
- Let the cake cool completely before frosting and enjoying! Store leftovers in an airtight container.Â
