Cake, sugar, and icing. These are the key components to any snack cake. From there, you can customize it any way you want to make your ultimate grain-free snack cake! We personally love this autumnally-spiced dairy-free version made with our Grain-Free Cassava Flour and Grain-Free Baking Powder. It's super easy to bake up, and you can serve it with your favorite frosting! Whether you choose chai buttercream, cream cheese icing, or even store-bought dairy-free frosting, the result will be grain-free bliss.

Ingredients

Instructions

  1. Preheat the oven to 325°F. Line an 8x8-inch glass baking pan with parchment paper.
  2. In a large bowl, combine the cassava flour, coconut sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Stir until well combined.
  3. Add the avocado oil, eggs, and yogurt. Stir until a smooth batter forms.
  4. Pour the batter into the baking pan. Spread the batter evenly into the pan.
  5. Bake for 40-45 minutes. The spice cake should be golden brown and a toothpick inserted into the center should come out clean or with dry crumbs.
  6. Let the cake cool completely before frosting and enjoying! Store leftovers in an airtight container.
