Soft, chewy grain-free sugar cookies are perfectly married together with a dollop of your favorite homemade frosting in between. Make some festive fun and color different bowls of frosting with natural food dyes, or use different flavors of frosting for an instant cookie sandwich smorgasbord!
These are also the perfect party offering, as this recipe has dairy-free and egg-free options! Thanks to Otto's, everyone can enjoy all their favorite sweet treats without worry!

Yield: approximately 12 sandwich cookies

Ingredients 

  • ½ cup softened butter (or palm shortening for dairy-free) 
  • 1 cup sugar 
  • 1 egg (or 1 Tablespoon of gelatin)
  • ½ teaspoon vanilla 
  • 2 Tablespoons melted butter (or palm shortening)
  • 1 ⅓ cups of Otto's Naturals - Cassava Flour
  • ¼ teaspoon baking soda 
  • ¼ teaspoon cream of tartar

 

  • ¼ c. granulated sugar, topping 
  • 1 batch of your favorite homemade frosting 
  • All-natural food colorings

Instructions

  1. Preheat the oven to 375°F and line baking sheets with parchment paper. 
  2. In a large bowl combine softened butter (or shortening) and sugar using a hand mixer. 
  3. Add egg, vanilla and melted butter to the butter and sugar mixture and mix until smooth. 
  4. In a separate bowl add cassava flour, baking soda and cream of tartar and mix until combined. 
  5. Combine dry ingredients into wet ingredients and mix well. 
  6. Roll dough into tablespoon-sized balls and roll them in the granulated sugar topping. 
  7. Place them on the baking sheets and gently flatten each ball. Bake for 6-8 minutes. Let the cookies cool on the pans for 3-5 minutes before transferring to a cooling rack. Cool completely before assembling the sandwiches. 
  8. Pair the cookies into sets of two. Prepare your frosting and color it as desired using the natural food coloring. Place a tablespoon of the frosting between each pair of cookies to make the sandwiches.
