These cookies are so easy and simple thanks to our Grain-Free Ultimate Cookie Mix - you don't even need an egg! These cookies are reminiscent of a berry lemonade. Fold in your favorite lemon curd straight into the dough, add some raspberries, and you've got a fruity cookie perfect for spring and summer. Bring it to picnics, pack it in a lunchbox, or snack on it with a cup of tea.
Ingredients
- 1 bag Otto’s Naturals Grain-Free Ultimate Cookie Mix
- ½ cup oil
- ¼ cup dairy/non-dairy lemon curd
- ½ cup frozen raspberries
Instructions
- Preheat the oven to 180°/ 350°F. Line a baking tray with parchment paper and set it aside.
- Mix the cookie mix, oil and lemon curd until it comes together as a dough. Fold in the raspberries.
- Roll the cookie dough into 16 even cookie balls. Spread them evenly on the baking tray and bake them for 10-15 minutes until lightly golden.
- Use a cookie cutter to resize the cookies into a neater circle, then allow the cookies to cool and enjoy!
