Grain-Free Peanut Butter Blossoms

These cookies are a classic, and for good reason. They're SUPER easy, only require a handful of ingredients, are delicious, and look ADORABLE! Perfect for after-school snacks or for baking with your little ones.
Ingredients
- 1 cup Otto’s Naturals Cassava Flour⠀
- ½ cup sugar⠀
- ½ cup brown sugar⠀
- ¾ cup peanut butter (creamy works best for blossoms)⠀
- ½ cup butter, softened⠀
- 1 egg⠀
- ¾ teaspoon baking soda⠀
- ½ teaspoon Otto’s Naturals Grain-Free Baking Powder⠀
- ½ teaspoon salt
- Chocolate kisses
Instructions
- Preheat oven to 375°F.⠀
- Mix sugars, peanut butter, butter, and egg in large bowl with hand beater or in food processor.⠀
- Mix dry ingredients together and then stir in.⠀
- Shape dough into 1 ¼-inch balls. Roll in sugar and place about 3-inches apart on ungreased cookie sheet.⠀
- Bake for 6-8 minutes. Then remove and place the chocolate in the center pressing down lightly. Then return to the oven for 1 min more.⠀
- Cool on a wire rack for about 5 mins. Enjoy!
