  1. Preheat oven to 180°C/350°F. Line 2 baking sheets with parchment paper and set aside.
  2. Mix together the cookie mix, oil, coffee, and egg until it comes together into a dough.
  3. Scoop the cookie dough into 12 dough balls using a cookie scoop or by hand. Place the cookies on the baking sheets, spaced evenly. Bake for 10-15 minutes.
  4. Once baked, allow to cool completely. 
  5. Cream cheese frosting on top and dust with cocoa powder.
