Grain-Free White Chocolate Chai Blondies

Classic blondies are given a chai-spiced makeover. In no time, you'll be enjoying a cup of tea and one of these "sugar & spice" treats!
Ingredients
- 2 ⅓ cups Otto’s Naturals Cassava Flour
- 1 cup light brown sugar
- 1 cup (2 sticks) vegan (or non-vegan) butter, melted
- 2 eggs
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ cup brewed chai (1 chai tea bag brewed in ¼ cup water)
- ¾ cup white chocolate chips (vegan or regular)
Icing:
- ½ cup powdered sugar
- ½ Tablespoon water
Instructions
- Preheat oven to 365°F. Grease and line an 8x8-inch (or 9x5-inch) baking pan with parchment paper and set aside.
- Pour boiling water into a mug with chai teabag and set it aside for at least 5 minutes to brew.
- Start by browning the butter by heating the butter in a pan on medium heat for 3-5 minutes or until the butter has melted and browned.
- Remove the butter from the heat and set aside to cool.
- Add the sugar and eggs to the cooled browned butter.
- Add the cassava flour, cinnamon and nutmeg to the browned butter and mix to combine.
- Add the brewed tea to the mixture and stir to combine.
- Fold the chocolate chips into the batter and transfer the batter to your prepared baking pan.
- Bake for 20-25 minutes or until golden brown.
- Meanwhile, as the blondies cool, make the icing by mixing together the powdered sugar and water until smooth and thick.
- Drizzle the icing over the cooled blondies using a spoon or piping bag.
- Slice into squares and enjoy!
