Easy Grain-Free Snickerdoodle

Classic snickerdoodle cookies, complete with the traditional sugar and cinnamon topping, are now grain-free and gluten-free thanks to Otto's Cassava Flour! Yet they retain the delightful chewy and soft texture you've always loved. We bet you can't eat just one.

IngredientsÂ
- 1 ⅓ cups Otto’s Naturals – Cassava Flour
- ¼ teaspoon baking soda
- ¼ teaspoon cream of tartar
- ½ cup softened butter + 2 Tablespoons melted butter
- 1 cup sugar
- 1 egg
- ½ teaspoon vanilla
Cookie Topping
- 2 teaspoons sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 375°F and line baking sheets with parchment paper.
- In a large bowl combine softened butter and sugar using a hand mixer.
- Add egg, vanilla and melted butter to the butter and sugar mixture and mix until smooth
- In a separate bowl, add cassava flour, baking soda and cream of tartar. Mix until combined
- Add dry ingredients into wet ingredients and mix well.
- In a small bowl, mix together cinnamon and sugar for topping.
- Roll dough into tablespoon-sized balls and roll in the cinnamon sugar topping
- Place on baking sheet and bake for 6-8 minutes
