This peppermint brownie recipe is perfect for baking season. Our brownie mixes are simple wholesome ingredients and convenient, meaning your brownies will taste made-from-scratch. Ingredients 

Brownies:

  • 1 bag of Otto's Naturals Grain-Free Brownie Mix (Classic or Paleo)
  • 2 eggs
  • 1/2 cup avocado or other neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup of semi-sweet chocolate chips
  • 1 tsp peppermint extract

Frosting:

  • 1/4 cup unsalted butter softened to room temperature
  • 1 cups confectioners’ sugar
  • 1 Tablespoon milk 
  • 1/2 teaspoon peppermint extract
  • 3-4 crushed up candy canes (for sprinkling on top)

Chocolate Ganache:

  • 1/4 unsalted butter
  • 1/2 cup semi-sweet chocolate chips

Instructions 

  1. To make the brownies: add all ingredients to mixing bowl and mix until smooth.
  2. Line a brownie pan with parchment paper and pour in batter. Spread evenly.
  3. Bake in a preheated 350°F oven for 20-25 min. Cool completely.
  4. For the frosting: add room temperature butter to the mixer and mix on low until smooth.
  5. Pour in powdered sugar and milk. Add peppermint extract.
  6. Blend on high until fully mixed, feel free to add more milk to reach the desired texture.
  7. Wait till brownies are cool. Apply on top of brownies.
  8. Prepare the chocolate ganache: melt the butter and chocolate chips on the stovetop over low heat. Make sure to stir consistently.
  9. Once fully melted, cool slightly to prevent the ganache from melting the frosting layer. Once lukewarm, pour on top of frosted brownies.
  10. Sprinkle on crushed-up candy canes.
  11. Let chill in the fridge for 1-4 hours. Cut. Enjoy!
